Egg Bhurji (Spiced Indian Scrambled Eggs)

The Indian version of scrambled eggs is called egg bhurji. These delectable Indian scrambled eggs are ideal for any meal of the day since they are bursting with just the proper amount of flavor and spice!

Because it’s so simple to make and only requires a few basic ingredients that you’ll always have on hand, you’ll want to make Egg Bhurji every week.

The spiced Indian equivalent of scrambled eggs is called Egg Bhurji. Additionally known as Anda Bhurji. Hindi for “anda” is “egg.” It is a quick and simple recipe that goes well with pav, also known as bhurji pav, or dinner rolls. India’s Egg Bhurji is a well-liked breakfast alternative, particularly in Mumbai, where I was raised. It is offered with pav or toasty bread.

With a few minor variations, the Parsi dish Akoori or Akuri is quite similar to Egg bhurji. Akuri is quite spicy since it contains a lot of condiments including ginger, garlic, pepper, onion, and other spices. With the eggs cooked a little bit less than in the case of the bhurji, akoori has a tendency to be moister.

 

What components should be added to anda bhurji?

Onions, tomatoes, green chilies, and spices make up the essential components of this traditional egg bhurji curry recipe. To give it an extra taste, you can also add more vegetables like bell peppers, peas, and mushrooms.

When creating this Indian scrambled egg curry, you can omit the green chili and red chilli powder if you don’t want to add too much heat.

How do you cook scrambled eggs in India?

  • The eggs should be whisked in a basin and placed aside before making Egg Bhurji. Chop the tomatoes, onions, and green chilis.
  • Add cumin to hot oil in a big pan. Till the color of the cumin begins to change, let it sizzle.
  • After adding the tomatoes and seasonings, thoroughly combine them before adding the onions and green chile and continuing to cook until the onions are golden brown. To soften the tomatoes, place a lid on the pan.
  • Add the whisked egg mixture now, and combine it thoroughly with the tomatoes and onion.
  • Till the eggs are thoroughly scrambled, keep stirring. Once they are thoroughly cooked, turn off the heat.
  • Serve the egg bhurji hot with pav, roti, or paratha and garnish with cilantro.

Any meal of the day can benefit from Egg Bhurji as a side dish. In the evening, we frequently serve this delectable Egg Bhurji Curry with flatbread or paratha and lentil soup. We prefer to serve the spicy Indian scrambled eggs we prepare for breakfast with toasted bread (pav).
